Black Pepper

Whole black pepper is the dried whole berry, usually picked before Piper Nigrum is fully ripe. The berries are brown, grey or black in colour and have a wrinkled pericarp.
Black pepper powder is obtained by grinding black pepper. The grind can be light grey to dark grey depending on the origin of the pepper. Finding small pieces of pepper is a characteristic quality criterion.

Whole turmeric is made of the primary or secondary rhizomes, commercially called bulbs or fingers, which are orange-yellow in colour.
The rhizomes are dry, well developed. Ground turmeric is a fine, orange-yellow powder.

Coriander

Seeds colour is between yellowish-brown and light brown. Fruits have a shape from spherical to elliptical with a diameter from 2mm to 6mm.
The size depends on the origin (for example : Spain origin is bigger than Ukraine origin). The powder is coarse and yellow-brown to light brown in colour.
Can be sold as a ground powder.

Whole or cut ginger is the dried rhizome of the Zingiber officinale Roscoe, in irregularly shaped pieces at least 20mm long, or in small cut pieces, ranging in colour from light buff to light brown, fibrous, peeled and bleached, washed and sun-dried. Dried rhizomes may also be ground.

Cinnamon

Cinnamon comes in the form of sticks of variable size (6-7 cm, 20 cm) or pieces of bark of a few centimeters.

The smell and flavour must be fresh and characteristic of the cinnamon of the origin concerned. They must be free of foreign flavours, including mould.
Cinnamon from Indonesia and Vietnam has sweeter tastes than the other origins (in particular Madagascar which has more "earthy" notes).

The colour of dehydrated garlic is sensitive to growing conditions and can range from cream to yellow. Dehydrated garlic exists in various forms : flake, granules, powder.

The odour after rehydration is characteristic, pungent, and free of foreign or abnormal odours.
The flavour is characteristic of blanched garlic and free of foreign or abnormal flavours, such as those which may come from mouldy, rancid, fermented or burnt particles.

Cumin is the fruit of Cuminum cyminum, which is made up of two elongated mericarps that remain united and whose dimensions vary according to their origin.
On each mericarp, which is ochre-grey to light brown in colour, there are five fairly thin primary.
